sweet potato brownies
gluten-free. vegan.
Ingredients
- 4 cups sweet potato (1 large or 2 small-medium sweet potatoes)
- 2 cups oat flour (oats)
- ⅓ cup cocoa powder
- 2 tsp baking soda
- ⅓ tsp salt
- ¼ cup almond butter
- ⅓ cup maple syrup
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
- ⅓ cup chocolate chips
Instructions
- Preheat oven at 350°.
- Steam sweet potatoes (w skin on) for about 20-25 min or until completely soft.
- Blend all ingredients (except chocolate chips) in food processor or blender.
- Line baking pan with avocado oil.
- Put components into baking pan and mix in chocolate chips.
- Bake for 25-30 min or until toothpick comes out mostly clean.
