sweet potato brownies

gluten-free. vegan.

Ingredients 

  • 4 cups sweet potato (1 large or 2 small-medium sweet potatoes)
  • 2 cups oat flour (oats)
  • ⅓ cup cocoa powder
  • 2 tsp baking soda
  • ⅓ tsp salt
  • ¼ cup almond butter
  • ⅓ cup maple syrup 
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract
  • ⅓ cup chocolate chips 

 

Instructions

  1. Preheat oven at 350°.
  2. Steam sweet potatoes (w skin on) for about 20-25 min or until completely soft.
  3. Blend all ingredients (except chocolate chips) in food processor or blender.
  4. Line baking pan with avocado oil. 
  5. Put components into baking pan and mix in chocolate chips.
  6. Bake for 25-30 min or until toothpick comes out mostly clean.
  7. Enjoy!
