emma's chickpea tuna dip

gluten-free, vegan

recipe created by my good friend, emma rosenblatt 

Ingredients

  • 1 can chickpeas (aka garbanzo beans)
  • 1/4 cup mayo (I use my homemade mayo)
  • 2 medium pickles, sliced
  • 2 celery sticks, sliced
  • 1/4 cup pickle juice
  • 1 tsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp pepper 
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder (optional)
  • pinch of cayenne pepper

Instructions

  1. strain & rinse chickpeas
  2. put chickpeas in bowl
  3. mash chickpeas with fork
  4. add mayo, pickle juice, & lemon juice to bowl & mix 
  5. add celery & carrots to bowl
  6. toss seasonings into bowl
  7. mix well & enjoy!

*best served with simple mills mediterranean herb crackers
